<p>まずは主役の豚バラ肉を塩漬けにしましょう。<br>今回は、400g程度のブロック上のものを使用しました。<br><strong><span class="marker-red">400gのブロックに対して、塩50g程度を満遍なく付着させます。<br></span></strong>サランラップに隙間が出ないよう、<strong><span class="marker-blue">空気を抜きながら包んで、冷蔵庫24時間寝かせます。</span></strong></p>

<p>続いて、塩漬けして寝かせた豚バラ肉を塩抜きしましょう！<br>ラップを取り、<strong><span class="marker">12時間程度冷水に浸しておきます。</span></strong></p>

<p>今回はサクラのチップを使用して燻製ベーコンを作っていきます。</p>

<p>準備した燻製用のサクラチップを、中華鍋に入れましょう！<br><strong><span class="marker">中華鍋がなければ、カサの深い鍋でも代用いただけます。<br></span></strong>今回使用する豚バラ肉ブロック（400g）に対して、上記画像を目安に準備します。</p>

<p>中華鍋に用意した燻製チップの上に網などを置き、その上に豚肉を置きます。</p>

<p>ここでポイントですが、<strong><span class="marker-red">チップから豚肉までは2〜3cmのスペースを保つようにしましょう！</span></strong><br>燻製チップと豚肉の距離が近すぎると、<strong><span class="marker-blue">焦げ付きの原因になってしまうので注意が必要です。</span></strong></p>

<p>豚肉をセットしたら、中華鍋に蓋をして1時間燻製にします。<br><strong><span class="marker-red">火加減は弱火で問題ありません♪<br></span></strong>また、燻製の煙が出ますので換気は徹底しましょう！<br><strong><span class="marker">30分程度で様子見をして、豚肉をひっくり返して再度30分燻製します。<br></span></strong>ちなみに、参考画像のようなガラス製の蓋を使用することで、燻製ベーコンの確認がしやすいですよ♪</p>

<p>梅干しを2つ程度準備し、タネを取っていきましょう。<br>使用する梅干しは特に指定などはなく、スーパーに売っているもので構いません。<br>ただ、<span class="bold"><span class="marker">『蜂蜜漬け』などの少し甘い梅干しは、今回は使用を避けましょう！</span></span><br>『かつお風味』や『紫蘇風味』などの梅干しであれば問題ございません。<br><br><span class="bold"><span class="marker-red">包丁の先で梅肉を削ぐようにすると、綺麗にタネを取り除けますよ♪<br></span></span>種を取り除いた梅肉を、1cm程度のみじん切りにしましょう。</p>



<h3 class="wp-block-heading"><span id="toc3">フライパンで『しらす』を炒める</span></h3>

<p>続いて『しらす』を準備しましょう。<br>しらすも、スーパーに売っているものであれば特に指定などはありません♪<br><span class="bold"><span class="marker">1人前で大さじ３程度を目安に使っていきます。<br></span></span>フライパンに、サラダ油大さじ2を入れ、弱火で加熱します。<br>フライパンが温まってきたら『しらす』を入れ、良い香りがしてくるまでゆっくりと炒めていきましょう♪<br><span class="bold"><span class="marker-red">この時火が強すぎるとすぐに焦げてしまうので、火加減には十分注意しましょう！</span></span><br>木ベラなどを使用し、しらすを優しく炒めていきましょう。</p>



<h3 class="wp-block-heading"><span id="toc4">フライパンに卵を割り入れる</span></h3>

<p>『しらす』に焦げ目がついてきたら、続いて卵を入れます♪<br><span class="bold"><span class="marker-red">この時勢いよく入れると、油が飛び散るので注意しましょう！<br></span></span>卵としらすを、軽く和えるように混ぜていきます。</p>

<p>しらすと卵が良い感じに混ざり合ったら、ご飯を入れて炒めていきます。<br>ご飯はできれば温かいものを準備してください。<br><span class="bold"><span class="marker-blue">ご飯が冷たいとフライパンの温度が下がり、『べちゃ』っとした残念な仕上がりになります！<br></span></span>また、フライパンもできる限りコンロから離さず、<span class="bold"><span class="marker">一定の温度を保つように意識しながら炒めていきましょう♪</span></span></p>

<p>まずは木くらげの下準備からしていきましょう！<br>とは言え、乾燥木クラゲを水に漬け込むだけOKです♪<br><span class="bold"><span class="marker-red">ここ最近市販されている乾燥木クラゲは、5〜10分で素早く戻ってくれるので使いやすいですね！</span></span></p>

<p>今回は中華鍋を使って作っていきます♪<br>中華鍋を中火にかけ、<span class="bold"><span class="marker">湯気が出てきたらごま油大さじ2を加えましょう。</span></span></p>

<p>中華鍋に胡麻油を入れたら、卵2個を入れ、半熟になるまで炒めます。<br><span class="bold"><span class="marker">木ベラやフライ返しを使って仕上げていきましょう♪<br></span></span>1分程度炒めたら半熟になってくるので、お皿などを用意し、一旦中華鍋から卵を取り出しておきましょう。</p>

<p>卵を取り出したら、中華鍋をさっと水洗いし、再び火にかけます。<br><span class="bold"><span class="marker-red">ニラは事前に5cm程度にカットしておきましょう。<br></span></span>中華鍋にごま油大さじ1を入れ、強火で加熱していきます。<br>湯気が出てきたらニラと木クラゲを加え炒めていきましょう♪<br><span class="bold"><span class="marker">ニラと木クラゲに火が通ったら、軽く塩胡椒で下味をつけます。</span></span></p>

<p>冷蔵、冷凍、常温保存と色々と試しましたが、<span class="bold"><span class="marker-blue">新聞紙で包んで立てて保存するのが鮮度と食感を保ち、長期間保存できました。</span></span><br>新聞紙が余分な水分を吸収してくれます。<br>夏時期でも、<span class="bold"><span class="marker">1週間程度であれば食感も香りもそこまで失われずに美味しく頂けます。</span></span><br>ニラを購入した際は是非お試し下さいね♪</p>

<p><span class="bold"><span class="marker">まずはカレー作りには欠かせない薬味の準備をしましょう♪<br></span></span>にんにく1片、生姜少々をみじん切りにします。<br>にんにくは皮を剥いて、<span class="bold"><span class="marker-red">包丁の腹などで潰した後にみじん切りにすると、香りが立つのでおすすめです！</span></span></p>

<p>続いて、カレーに入れるお好みの食材をカットしましょう♪<br>今回は、定番の玉ねぎ、人参、豚バラ肉を使用しました。<br>もちろん入れる野菜、お肉に関してはお好みのもので大丈夫です！<br><span class="bold"><span class="marker">冷蔵庫の余り物を使用しても美味しく作れるので、材料の整理にもなって一石二鳥です！<br></span></span>玉ねぎはくし切りに、にんじんは乱切りに、豚バラ肉は一口大にカットします。</p>

<p>食材のカットが終わったら、フライパンを準備しましょう♪<br><span class="bold"><span class="marker-red">今回は中華鍋を使用して作りますが、一般的なテフロンフライパンでも大丈夫です。<br></span></span>ごま油大さじ2を中華鍋に入れて、刻んだにんにくと生姜を入れ、弱火で加熱します。<br>にんにくは焦げやすいので、弱火でゆっくりと加熱しましょう！</p>

<p>豆板醤を入れて軽く炒めた後は、食材を入れていきましょう♪<br>豚バラ肉を先に入れ、肉の色が変わったら玉ねぎと人参を加えて炒めていきます。</p>

<p><meta charset="utf-8">今回使用するのは、牛肉、エリンギ、人参です。<br>牛肉はアメリカ産の細切れ肉を使用し、さらに細かくみじん切りにしました。<br><span class="bold"><span class="marker-red">牛肉は細かく切った方が、春雨によく絡むのでオススメです♪</span></span></p>

<p>続いて春雨を茹でましょう♪<br>一般的に市販されている春雨の湯で時間は3〜5分です。<br>後ほど食材と合わせて炒めるので、<span class="bold"><span class="marker">表記されている茹で時間の2分早めに茹で上げましょう！</span></span><br>今回私が使用した春雨の湯で時間は4分表記だったので、2分で茹で上げました。</p>

<p>チャプチェの材料に一通り食材に火が通ったら、先ほど水で戻した乾燥キクラゲを加えて、さらに炒めましょう！</p>

<p>今回は市販の<strong><span class="marker-red">SB食品の豆板醤</span></strong>を使用します。<br>いくつか豆板醤を試しましたが、こちらの豆板醤が一番マイルドで鳥肉にも良く合います。</p>

<p>その他調味料の分量は下記の通り♪</p>

<p>今回、豆板醤は大さじ2ですが、これはピリ辛レベルで、お子さんでも食べれる位の辛さです。<br><span class="bold"><span class="marker-red">『激辛大好き』な方は、豆板醤を増量したり、チリペッパー、タバスコを追加すればどんどん辛くできちゃいます！</span></span><br>自己責任でお試しください。。<br>これらの調味料を鳥肉と一緒にボウルに入れ、鳥肉に満遍なくしっかりと絡むようにひとまぜして、最後に片栗粉を入れて混ぜます。</p>

<p>当ブログでも紹介しています、<a title="https://syokunotoriko.com/agemono_flypang/" href="https://syokunotoriko.com/agemono_flypang/">『フライパンでの揚げ物』</a>ですが、<span class="bold"><span class="marker-red">今回は気分を変えて「中華鍋」で揚げていきます。</span></span><br>中華鍋は<strong><span class="marker-blue">鍋底が深く設計されているので、油ハネなどを緩和してくれ、揚げ物レシピにおすすめです。</span></strong><br>勿論、普通のフライパンでも作れますので、<span class="bold"><span class="marker">中華鍋がない場合はフライパン（もしくは揚げ物鍋）で対応してください。</span></span></p>

<p>今回のように<strong><span class="marker">二度揚げする場合、鳥肉を「一度休ませる」必要があります。</span></strong><br>その際にバットがあるととても便利！<br>まとめて唐揚げを大量に作る際にも大活躍ですよ♪</p>

<p>中華鍋に油を入れて、中火で温めていきます。<br>頃合いは箸を入れて、<strong>プクプクと気泡が立ってきたら準備OKのサインです！</strong></p>

<p>時間にして3〜4分間が目安です。<br>一度揚げ終わった鶏肉は、バット、もしくは別皿にキッチンペーパーを敷きその上で休ませましょう。<br><span class="bold"><span class="marker-red">この「休み時間の余熱」で、鳥肉の中までゆっくりと熱を通していきます。</span></span></p>

<p>ここまできたらもう完成間近です！<br><span class="bold"><span class="marker-red">美味しいビールも忘れずに、キンキンに冷やしておきましょう♪</span></span><br>二度目の揚げは、強火で一気に揚げていきます。<br>一度目の揚げの後に鳥肉を10分程度休ませたら、再び中華鍋を準備しましょう。<br>強火にして一気に揚げていきます！<br>この際、鳥肉にムラなく均一に火を通したいので、フライパンのサイズにもよりますが、今回のように中華鍋を使用し300gの鳥肉であれば、まとめて全投入でOKです！<br><span class="bold"><span class="marker">一度目の揚げで衣もカリッと揚がっているので、唐揚げ同士のくっつきなどの心配もありません！</span></span><br>強火で3分程度揚げたら、完成です♪</p>
